Making Iraqi Gamer - قيمر عراقى اصيل
Ingredients:
1/2 Gallon Vitamin D pasteurized, homogenized Milk.
1/4 Gallon ultra pasteurized heavy whipping cream in thick liquid form.
Mix everything in a 4-quart size aluminum pot (DO NOT USE NON STICK).
On high flame heat the mixture stirring every now and then to keep it from burning and/or sticking to the side of the pot, (do not stir continuously) keep heating until the mixture starts to rise, once you see that it rose about 1/4 to 1/2 inch above its level, turn off the heat and carefully remove the pot and leave it to cool down (making sure that you do not shake the pot and aggravate the mixture, it should stay calm). Once its cold, place it (carrying it carefully again) in a refrigerator for about 36 hours, (again keep the pot very calm). Gently touch the top of the mixture with your finger (do not puncture it) it should be thick and dense. Use a round pointed knife to separate the thickened top from the inner side of the pot, and with a wide spatula pick it up and place it in a flat plate.
Now you can enjoy the (GAMER) with some (DIBBIS) date syrup.
